100g cooked fine green beans |

8 cooked baby new potatoes such as Anya cut in half |

10 baby plum tomatoes cut in half |

1 pack of rocket |

4 anchovy fillets drained and cut in half |

4 tbsp Dressing (see below) |

3 tbsp olive oil |
 |
1 tbsp white wine vinegar |
 |
1/2 tsp dijon mustard |
 |
Chopped mix herbs |

- 1-2 tbsp of basil, parsley, chives etc |

Salt and freshly ground black pepper to taste |

 |
| Mix all your salad ingredients in a bowl, when the fish is cooked, gently stir in some of the dressing just to coat the salad and season. Serve with the cooked fish and some crusty bread. |
